Time for a healthful dinner !
A quinoa salad with cannellini beans (didn’t have chick peas), asparagus, celery, kale, spinach, grape tomatoes, scallions, a bit of feta then drizzled with a garlicky, lemony dressing (with fresh lemon thyme) and served with roasted tricolor carrots and cauliflower.
